Tempura Tenders and Sweet Chilli Stirfry

Serves 4

Ingredients

1 x 400gm box Ingham Tempura Chicken Breast Tenders
1 x 450gm packet Fantastic Hokkien Noodles
1 tablespoon peanut oil
1 red onion, peeled,sliced
2 cloved garlic, peeled, thinly sliced
1 tablespoon ginger , grated
1/2 cup sweet chilli sauce
1 tablespoon lime juice
1 tablespoon kecap manis
2 cups Birds Eye Country Harvest Carrot, Cauliflower & Broccoli frozen vegetables
1/4 cup coriander leaves
Lime wedges for serving

Method

1. Prepare Inghams Tempura Chicken Breast Tenders according to packet directions. Prepare Fantastic Hokkien noodles as per packet directions.

2. Heat peanut oil in a wok over a medium heat. Add onion, garlic, ginger and stirfry for 2 minutes or until onion has softened.

3. Add the chilli sauce, lime juice, kecap manis and Birds Eye Country Harvest vegetables, stirfry for 2 minutes until well combined. Add fantastic noodles and toss well to combine and heat through. Stir through coriander.

4. Serve noodles and vegetables topped with Tempura chicken and lime wedges.
